WHO IS JERVIS BAY DISTILLING CO.

Distillery founder, Rob, grew up with the white sands of Jervis Bay between his toes. He loves the South Coast for all its natural beauty and the great times that come with an Australian summer.

Rob and his family have been in the business of good times and great drinks on the South Coast for over 25 years. This experience and passion, inspired Rob and his father to travel around Australia learning the art of distilling, then travelling further afar to Japan and Europe to hone their skills. Rob’s dream was to create a collection of spirits that tasted like a South Coast Summer – of sun, surf and good times with friends and family.

In 2021, Rob discovered those flavour combinations and launched the Jervis Bay Distilling Co. with wife, Lilly at his side, the couple continue celebrating the beautiful South Coast, bottling its unique spirit and exporting it across Australia and the world. At Jervis Bay Distilling Co, Rob and his team craft craft Gin, Vodka, Rum, and Aperitifs, each designed to capture the essence of the coast with specially sourced local botanicals. Vodka is triple distilled using pristine Jervis Bay rainwater to create a smooth, premium spirit. Aperitifs burst with flavour, taking traditional Italian recipes and making them uniquely Australian.
Lilly and Rob love to travel, try new things, and embrace life. Their distilling techniques and recipes are for like-minded people. Whether it’s a gin and tonic at sunset or an Aperitif shared with friends, Jervis Bay Distilling Co. is all about good times

SUSTAINABILITY

Protecting the pristine marine park that makes Jervis Bay so special is front and centre of all that we do. We prioritise sustainability and by supporting local ingredients and services, our products truly exemplify the best of the South Coast. We grow and harvest our own lemons, limes and herbs from our own garden. Neighbours we source from include Strong Organics in Terrewah, honey from Braidwood, Wandandian and Sanctuary Point, Oyster shells from Greenwell point, Finger limes and more from Falls Creek.

Supporting the Australian Marine Conservation Society

A portion of each bottle sale supports the important work of the Australian Marine Conservation Society (AMCS), Australia’s leading ocean conservation organisation, which cares for the health and protection of the Jervis Bay Marine Park and the beautiful whales that regularly pass by.

Bottle Recycle Program

In an effort to reduce the toll glass production has on our environment, we will happily refill your recently finished bottle of Jervis Bay Distilling Co. spirit.

Just bring your clean bottle to the distillery during opening hours, and we will refill it at 10% discount of RRP$. This offer cannot be redeemed on online orders, and cannot be used in conjunction with any other offer.

Our Water System

We do not use town water, instead, we collect Jervis Bay rainwater in special tanks. This water then passes through micron filters, activated carbon filters and our reverse osmosis filtration system, to create the purest Australian rain-water possible.

Our Solar Panels

The power of the sun provides energy for our distillery, with solar panels ensuring our site is carbon neutral.

Waste Management

We carefully manage any waste from production. Our water management system ensures zero wastewater enters the pristine environment, and our composter, Charlie Churner, minimises green waste while helping our fruit trees to thrive.
